Baked Kale and Cheddar Breakfast Cups

Healthy egg muffins are the perfect grab and go breakfast!

Breakfast is often described as the most important meal of the day. So, let’s start our day off right with these nutrient-dense, low-carb, Baked Kale and Cheddar Breakfast Cups.

As we all know, kale is packed with a range of vitamins and minerals, including Vitamins A, C, and K, as well as phytochemicals. To add even more vitamins to this recipe, I used Eggland’s Best eggs. Eggland’s Best eggs have six times more Vitamin D than ordinary eggs.

I found this particular recipe from the Daily Appetite website, and a few things made this recipe stand out:

  1. It was only five ingredients.

  2. It was packed with our super food of the week—kale.

  3. It only took 15 minutes to make!

These Baked Kale and Cheddar Breakfast Cups are easy to make, family friendly, make great freezer food, and are completely customizable! This recipe consists of eggs, kale, cheddar cheese, and a pinch of salt and pepper.
