Avocado Tomato Salad

We love avocados at Bright Sky Nutrition, and we encourage our clients to eat one a day! (Really! It's okay!)

Why should you eat an avocado a day?

• They are an amazing antioxidant that's high in Vitamin E and contains Vitamin C. Together, they work like a powerhouse for the body.

• They contain naturally good fats. These are great monounsaturated fats which help to raise your good cholesterol. And that fuels your brain!

• They contain 13 grams of fiber.

This salad is not only quick and easy to make, it's delicious and good for you. It's great as a side, a meal, and it's perfect to serve at summer potlucks.


1 large avocado

2 medium round tomatoes

1/3 cucumber

Juice of 1 lime

Basil (to taste)

Salt (to taste)


Simply put all the ingredients in a bowl and mix it up. The tomato and lime juices make the perfect dressing.

Mix it up:

Add bacon, red onion, corn, mozzarella, or cilantro to mix it up!
