5 Ingredient Banana Egg Blueberry Muffins
Have you ever made banana egg pancakes with cinnamon? These muffins taste very similar but they’re slightly sweeter because of the blueberries. (Any fruit would be delicious. You could even use nuts, or maybe even chocolate chips. You be you. )
These muffins are the perfect grab and go breakfast when you’re running out the door but want to eat something made with whole ingredients! They are simple, yummy and they reheat easily.
This recipe calls for just FIVE ingredients: eggs, bananas, blueberries, cinnamon and a pinch of salt! Because we are only using whole ingredients, these muffins are not only delicious, they are nutrient dense.
Here are the reasons your dietitian wants you to eat these Banana Blueberry Muffins:
Eggs are a great source of protein and other nutrients, such as vitamin B6, B12 and vitamin D.
Blueberries are packed with antioxidants and high in potassium and vitamin C. Eating blueberries everyday can boost immunity and can reduce the risk of diabetes, obesity and heart disease.
Bananas contain potassium and are low in sodium so the combination together helps to control blood pressure.
We used the Whole Smith's recipe to make these muffins. We highly recommend you give these a try!
